This chicken noodle soup is the perfect balance of rich broth, tender chicken, hearty vegetables, and comforting noodles. Whether you’re feeling under the weather or just craving a cozy meal, this homemade version is packed with flavor and warmth.


Ingredients:

For the Broth:

  • 1 whole chicken (or 4 bone-in, skin-on chicken thighs)
  • 10 cups water or low-sodium chicken broth
  • 1 onion, halved
  • 2 carrots, cut into large chunks
  • 2 celery stalks, cut into large chunks
  • 3 cloves garlic, smashed
  • 1 teaspoon whole black peppercorns
  • 2 bay leaves
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon dried thyme (or 2 sprigs fresh thyme)
  • ½ teaspoon dried rosemary (or 1 sprig fresh)
  • ¼ teaspoon turmeric (optional, for color and extra warmth)

For the Soup:

  • 2 tablespoons olive oil or butter
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups egg noodles (or any pasta of choice)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice (optional, for brightness)
  • Salt and black pepper, to taste

Instructions:

1. Make the Broth (Optional but Highly Recommended)

  1. Place the chicken, water (or broth), onion, carrots, celery, garlic, peppercorns, bay leaves, salt, thyme, rosemary, and turmeric in a large pot.
  2. Bring to a gentle boil, then reduce heat and let it simmer for 45-60 minutes, until the chicken is fully cooked and the broth is rich in flavor.
  3. Remove the chicken and let it cool slightly. Strain the broth, discarding the vegetables and spices. Skim excess fat if needed.

2. Prepare the Soup Base

  1. In the same pot, heat olive oil or butter over medium heat.
  2. Add diced carrots, celery, and onion. Sauté for 5-7 minutes until softened.
  3. Stir in minced garlic and cook for another 30 seconds.
