Peanut Butter Balls with Chocolate Rice Krispie

Here’s a simple and delicious recipe for Peanut Butter Balls with Chocolate Rice Krispies—a perfect mix of creamy, crunchy, and chocolatey goodness!

Ingredients:

  • 1 cup creamy peanut butter
  • ¼ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1 ½ cups chocolate Rice Krispies cereal
  • 10 oz semi-sweet or milk chocolate (for coating)
  • 1 tablespoon coconut oil or shortening (optional, for smooth chocolate coating)

Instructions:

  1. Mix the Base: In a large bowl, beat together the peanut butter, softened butter, and vanilla until smooth.
  2. Add Sugar & Cereal: Gradually mix in the powdered sugar until well combined. Then gently fold in the chocolate Rice Krispies, making sure they stay crunchy.
  3. Shape into Balls: Roll the mixture into small bite-sized balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  4. Chill: Refrigerate for about 30 minutes or until firm.
  5. Melt Chocolate: Melt the chocolate with coconut oil (if using) in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth.
  6. Dip & Set: Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, coating it fully. Let the excess drip off, then place it back on the parchment paper.
  7. Chill Again: Refrigerate for another 20 minutes or until the chocolate is set.
