1️⃣ Prepare the Potatoes:
- Boil the potatoes until fork-tender, then mash until smooth. Let them cool completely.
2️⃣ Make the Dough:
- In a bowl, mix mashed potatoes, flour, egg, melted butter, and salt until a soft dough forms.
- Knead gently on a floured surface, but don’t overwork it to avoid toughness.
3️⃣ Form the Dumplings:
- Roll out the dough to about ¼-inch thickness and cut into squares (about 3×3 inches).
- Place a plum (or a plum half with sugar & cinnamon) in the center of each square.
- Wrap the dough around the plum, sealing the edges tightly to form a ball.
4️⃣ Cook the Dumplings:
- Bring a large pot of water to a gentle boil.
- Drop in the dumplings and cook until they float (about 5-7 minutes).
5️⃣ Prepare the Breadcrumbs:
- In a pan, melt butter and toast breadcrumbs until golden brown.
- Remove dumplings from the water and roll them in the breadcrumb mixture.
6️⃣ Serve & Enjoy!
- Dust with powdered sugar and optionally top with sour cream for a creamy contrast.
