
Hungarian Bejgli (Poppy Seed & Walnut Roll)
Bejgli is a traditional Hungarian pastry, especially popular during Christmas and Easter. It has a soft, slightly sweet yeast dough rolled with a rich poppy seed or walnut filling.
Ingredients
For the Dough:
- 4 cups (500g) all-purpose flour
- ½ cup (100g) butter, softened
- ¼ cup (50g) sugar
- 1 packet (7g) dry yeast (or 25g fresh yeast)
- ½ cup (120ml) warm milk
- 1 egg
- 1 egg yolk (for brushing)
- 1 pinch of salt
For the Poppy Seed Filling:
- 1 ½ cups (200g) ground poppy seeds
- ½ cup (100g) sugar
- ½ cup (120ml) milk
- 1 tsp vanilla extract
- ½ tsp cinnamon (optional)
- Zest of 1 lemon
For the Walnut Filling:
- 1 ½ cups (200g) ground walnuts
- ½ cup (100g) sugar
- ½ cup (120ml) milk
- 1 tsp vanilla extract
- ½ tsp cinnamon (optional)
- Zest of 1 orange
