Hungarian Bejgli

Hungarian Bejgli (Poppy Seed & Walnut Roll)

Bejgli is a traditional Hungarian pastry, especially popular during Christmas and Easter. It has a soft, slightly sweet yeast dough rolled with a rich poppy seed or walnut filling.

Ingredients

For the Dough:

  • 4 cups (500g) all-purpose flour
  • ½ cup (100g) butter, softened
  • ¼ cup (50g) sugar
  • 1 packet (7g) dry yeast (or 25g fresh yeast)
  • ½ cup (120ml) warm milk
  • 1 egg
  • 1 egg yolk (for brushing)
  • 1 pinch of salt

For the Poppy Seed Filling:

  • 1 ½ cups (200g) ground poppy seeds
  • ½ cup (100g) sugar
  • ½ cup (120ml) milk
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)
  • Zest of 1 lemon

For the Walnut Filling:

  • 1 ½ cups (200g) ground walnuts
  • ½ cup (100g) sugar
  • ½ cup (120ml) milk
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)
  • Zest of 1 orange
