Hortobágyi Palacsinta

Hortobágyi Palacsinta is a traditional Hungarian dish that’s savory and hearty. It features crepes (palacsinta) filled with a rich meat stew, topped with a creamy paprika sauce, and baked to perfection.


Ingredients

For the crepes:

  • 1 cup (125 g) all-purpose flour
  • 1 cup (240 ml) milk
  • 1/2 cup (120 ml) sparkling water
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1 tablespoon oil or melted butter

For the filling:

  • 2 tablespoons oil
  • 1 medium onion, finely chopped
  • 1 pound (450 g) ground beef or pork (or a mix)
  • 1 teaspoon sweet paprika powder
  • Salt and pepper, to taste
  • 1 cup (240 ml) chicken or beef stock
  • 1/2 cup (120 ml) sour cream

For the sauce:

  • 1 cup (240 ml) reserved cooking liquid from the meat filling
  • 1/2 cup (120 ml) sour cream
  • 1 tablespoon all-purpose flour
  • Paprika for color (optional)
