Creamy Garlic Parmesan Tortellini with Chicken & Broccoli
Ingredients:
- 2 tablespoons olive oil (for cooking)
- 2 chicken breasts, boneless and skinless, cut into bite-sized pieces
- Salt and pepper, to taste
- 2 cups broccoli florets (fresh or frozen)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional, for a bit of heat)
- 1 (9-ounce) package refrigerated cheese tortellini (or any type of tortellini you prefer)
- 1/4 cup chopped fresh parsley (for garnish)
- Extra Parmesan cheese, for topping (optional)
Instructions:
- Cook the Tortellini:
- Bring a large pot of salted water to a boil.
- Cook the tortellini according to package instructions (usually about 3-4 minutes for fresh tortellini). Drain and set aside.
- Cook the Chicken:
- While the tortellini is cooking, heat the olive oil in a large skillet over medium heat.
- Season the chicken pieces with salt and pepper, then add them to the skillet.
- Cook the chicken for about 6-8 minutes, or until it’s fully cooked and golden brown on all sides. Remove the chicken from the skillet and set aside.
- Cook the Broccoli:
- In the same skillet, add a little more olive oil if necessary.
- Add the broccoli florets and cook for 3-4 minutes, stirring occasionally, until they are tender but still crisp. If using frozen broccoli, cook according to package instructions until heated through.
- Remove the broccoli and set it aside with the chicken.
- Make the Creamy Garlic Parmesan Sauce:
- In the same skillet, add the minced garlic and sauté for 1 minute, until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Bring the mixture to a simmer and cook for 3-4 minutes, allowing it to thicken slightly.
- Stir in the grated Parmesan cheese and Italian seasoning. Continue to cook for another 2-3 minutes, whisking until the sauce becomes smooth and creamy. If you’d like a little kick, add crushed red pepper flakes.
