Creamy Garlic Parmesan Tortellini with Chicken & Broccoli

Ingredients:

  • 2 tablespoons olive oil (for cooking)
  • 2 chicken breasts, boneless and skinless, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 2 cups broccoli florets (fresh or frozen)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional, for a bit of heat)
  • 1 (9-ounce) package refrigerated cheese tortellini (or any type of tortellini you prefer)
  • 1/4 cup chopped fresh parsley (for garnish)
  • Extra Parmesan cheese, for topping (optional)

Instructions:

  1. Cook the Tortellini:
    • Bring a large pot of salted water to a boil.
    • Cook the tortellini according to package instructions (usually about 3-4 minutes for fresh tortellini). Drain and set aside.
  2. Cook the Chicken:
    • While the tortellini is cooking, heat the olive oil in a large skillet over medium heat.
    • Season the chicken pieces with salt and pepper, then add them to the skillet.
