
Instructions
1️⃣ Preheat & Prep – Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
2️⃣ Mix the Ingredients – In a large bowl, whisk eggs and milk together. Add crushed Ritz crackers, chopped onions, cheddar cheese, salt, and black pepper. Mix until combined.
3️⃣ Add the Beef – Gently fold in the ground beef and mix just until combined. Do not overmix!
4️⃣ Shape & Bake – Form the mixture into a loaf shape and place it in the prepared pan. Bake for 45 minutes.
5️⃣ Make the Glaze – While the meatloaf bakes, mix ketchup, brown sugar, and mustard in a small bowl.
6️⃣ Glaze & Finish Baking – After 45 minutes, remove the meatloaf from the oven and spread the glaze on top. Return to the oven and bake for another 15 minutes.
7️⃣ Let It Rest & Serve – Allow the meatloaf to rest for 10 minutes before slicing. Serve warm with mashed potatoes or a side of vegetables.
