Cod with Vegetables Gratin


Instructions:

1. Prepare the Cod:

  • Preheat your oven to 375°F (190°C).
  • Season the cod fillets with olive oil, lemon juice, zest, minced garlic, salt, and pepper. Set aside to marinate for about 15 minutes.

2. Prep the Vegetables:

  • Toss the broccoli, carrots, zucchini, cherry tomatoes, and onion with olive oil, Italian seasoning, salt, and pepper. Arrange them in a large baking dish.
