Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the spaghetti according to package instructions until al dente.
- Drain and set aside, reserving ½ cup of pasta water.
Step 2: Prepare the Sauce
- In a large pan, heat butter and olive oil over medium heat.
- Add onions and garlic, sauté until soft and fragrant.
- Stir in ham or smoked sausage and cook for 2-3 minutes until lightly browned.
- Pour in heavy cream, add nutmeg, salt, and black pepper, and simmer for 2 minutes.
Step 3: Combine & Serve
- Add the cooked spaghetti to the pan and toss to coat.
- Stir in grated cheese, letting it melt into a creamy sauce.
- If needed, add some reserved pasta water to loosen the sauce.
- Garnish with fresh parsley and serve immediately!
