Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the spaghetti according to package instructions until al dente.
  3. Drain and set aside, reserving ½ cup of pasta water.

Step 2: Prepare the Sauce

  1. In a large pan, heat butter and olive oil over medium heat.
  2. Add onions and garlic, sauté until soft and fragrant.
  3. Stir in ham or smoked sausage and cook for 2-3 minutes until lightly browned.
  4. Pour in heavy cream, add nutmeg, salt, and black pepper, and simmer for 2 minutes.

Step 3: Combine & Serve

  1. Add the cooked spaghetti to the pan and toss to coat.
  2. Stir in grated cheese, letting it melt into a creamy sauce.
  3. If needed, add some reserved pasta water to loosen the sauce.
  4. Garnish with fresh parsley and serve immediately!
